Pasture Raised Pork

Due to increased demand for our pork, we are featuring our Pork Sampler Package, available for sale in March 2009.  The sampler includes 18 lbs of a variety of cuts of pork, including:  smoked ham steaks, pork chops, country style ribs, bacon, Italian sausage, and breakfast sausage.  Please note that we only offer nitrate-free smoked steaks and bacon.  This is very reasonably priced at $125.

Whole and half pigs will be available in June of 2009 at the exceptional cost of $5.50/lb hanging weight.  We try to target a hanging weight between 200 and 250 lbs, but we can no guarantee a specific weight.  We will work with you to determine exactly how you would like to have your pig cut and we take care of everything – transporting the pig to the slaughterhouse, working with the butcher, and picking up your product.  Your pig will be processed in USDA inspected facilities and will be packed in clear, cryovac containers so you can see exactly what you are getting.  There will be a small additional fee for smoking and specialty cuts such as kielbasa.

In June of 2009, we will have whole pigs available at the incredible price of $3.00/lb.  We transport the pig to Salem Prime Cuts in Salem, CT, and you take it from there.  You will have full responsibility for kill fees, butchering fees, and establishing the cut list with the butcher.  Salem does a nice job and this might be a good option for a group of people who would like to split a pig.  We’re sorry, but this price applies to WHOLE pigs only.

All our pork is available by individual cuts as well.  Supplies on certain items may be limited.  Please see the complete price list below.

Beef

We are proud to offer beef that has been raised by our friends at Buy Back Farm in North Stonington Connecticut.  This beef is a Hereford/Angus cross and has been fed grass, hay, and silage – this is a grain-free product.  In addition to individual cuts listed below, we also offer ½ and whole cows at the very low price of $6.00/lb, hanging weight.  We try to target a 675-750 lb hanging weight.  As with our pigs, we take all the guesswork out of cut lists and will work closely with you to ensure you get exactly what you want.  Your meat is processed in a USDA inspected facility and is packaged in cryovac packages so you can see exactly what you are getting.  There will be an additional fee for any specialty products such as hot dogs, kielbasa, or bologna.

We will also have whole cows available at the incredible price of $3.50/lb.  We transport the cow to Salem Prime Cuts in Salem, CT, and you take it from there.  You will have full responsibility for kill fees, butchering fees, and establishing the cut list with the butcher.  Salem does a nice job and this might be a nice option for a group of people who would like to split a cow.  We’re sorry, but this price applies to WHOLE cows only.
